It has been several days and the employee has not released the requested data. How can I move things along?

Contact the employee to let them know you are waiting on their request; direct them to VerificationManager.com to create an employee account. First-time users of the site may not be aware that they need to approve, even though VerificationManager attempts to contact them with the email and/or phone information provided by the employer.
